Green Chili Cheddar Flatbread Melts

2 cups all-purpose flour

1 tsp baking powder

1/2 tsp salt

1/4 cup olive oil

3/4 cup water (plus extra as needed)

1 cup shredded sharp cheddar cheese

1 cup fresh green chilies, chopped (mild or hot depending on preference)

1/4 cup chopped fresh cilantro (optional)

1 tsp garlic powder

1 tsp onion powder

Sour cream or Greek yogurt for serving (optional)

Instructions
 

Prepare the Flatbread Dough: In a large mixing bowl, combine the flour, baking powder, and salt. Mix well. Add the olive oil and gradually incorporate the water, stirring with a spoon until a dough starts to form.

    Knead and Rest: Transfer the dough onto a floured surface and knead for about 5 minutes until smooth. Place the kneaded dough in a lightly oiled bowl, cover with a damp cloth, and let it rest for 30 minutes.

      Preheat the Oven: Preheat your oven to 425°F (220°C). If using a pizza stone, place it in the oven to heat.

        Prepare the Filling: In a medium bowl, combine the shredded cheddar cheese, chopped green chilies, cilantro (if using), garlic powder, and onion powder. Mix well and set aside.

          Roll Out the Flatbread: After the dough has rested, divide it into 4 equal portions. Roll each portion out on a floured surface into a round flatbread, about 1/4 inch thick.

            Assemble the Melts: Place each flatbread on a baking sheet or the heated pizza stone. Spread a generous amount of the cheese and chili mixture onto half of each flatbread, then fold over the other half to create a semi-circle. Make sure to press the edges to seal.

              Bake: Place the assembled flatbreads in the hot oven and bake for about 10-12 minutes or until golden brown and the cheese is melted and bubbling.

                Serve: Remove the flatbreads from the oven and let cool for a couple of minutes. Slice into wedges and serve warm with sour cream or Greek yogurt on the side for dipping.
