1 head of romaine lettuce (or butter lettuce for a sweeter touch)

1 cup cherry tomatoes, halved

1 cucumber, diced

1 cup Kalamata olives, pitted and halved

1/2 red onion, thinly sliced

1 cup feta cheese, crumbled

1/4 cup fresh parsley, chopped

1/4 cup extra virgin olive oil

2 tablespoons red wine vinegar

1 teaspoon dried oregano

Salt and pepper to taste

Prepare the Lettuce Wraps: Carefully separate the leaves of the romaine lettuce, making sure to keep them intact. Rinse and pat them dry with a paper towel. Set aside.
