2 cups elbow macaroni

2 tablespoons unsalted butter

2 tablespoons all-purpose flour

1 cup whole milk

1 cup shredded sharp cheddar cheese

1 cup shredded mozzarella cheese

1/2 teaspoon garlic powder

1/2 teaspoon onion powder

1/2 teaspoon mustard powder

Salt and pepper to taste

1/2 cup breadcrumbs

1/4 cup grated Parmesan cheese

Fresh parsley, chopped (for garnish)

Cook the Pasta: In a large pot of salted boiling water, cook the elbow macaroni according to package instructions until al dente. Drain and set aside.

    Make the Cheese Sauce: In a medium saucepan, melt the unsalted butter over medium heat. Once melted, whisk in the flour to form a roux, cooking for about 1 minute until golden. Gradually pour in the whole milk, whisking constantly to avoid lumps. Continue to cook for about 3-4 minutes until the mixture thickens.

      Add the Cheese: Remove from heat, then stir in the sharp cheddar and mozzarella cheeses until melted and smooth. Add garlic powder, onion powder, mustard powder, and season with salt and pepper to taste.

        Combine Pasta and Sauce: In a large mixing bowl, combine the cooked macaroni and cheese sauce, mixing well until all the pasta is coated.

          Prepare Muffin Tin: Preheat your oven to 375°F (190°C). Grease a mini muffin tin with non-stick cooking spray.
