Ingredients

1 large head of cauliflower

4 tablespoons olive oil

4 cloves garlic, minced

1 teaspoon dried thyme

1 teaspoon dried oregano

1 teaspoon smoked paprika

½ teaspoon sea salt (or to taste)

½ teaspoon black pepper

Fresh parsley, chopped (for garnish)

Lemon wedges (for serving)

Instructions

Prep the Cauliflower:

    - Remove the outer leaves of the cauliflower, and carefully cut the head into 1-inch thick slices (steaks). You may get some florets; save those for another recipe!

      Make the Herb Mixture:

        - In a small bowl, combine the olive oil, minced garlic, dried thyme, dried oregano, smoked paprika, sea salt, and black pepper. Mix well to create a garlic herb oil.

          Coat the Cauliflower Steaks:

            - Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper or lightly grease it.

              - Place the cauliflower steaks on the baking sheet and brush both sides generously with the garlic herb oil mixture.

                Roast the Cauliflower:

                  - Roast in the preheated oven for about 25-30 minutes, flipping halfway through until the cauliflower is golden brown and tender with crispy edges.

                    Garnish and Serve:

                      - Once done, remove from the oven and let rest for a few minutes. Garnish with chopped fresh parsley and serve with lemon wedges on the side for a burst of freshness.
