Ingredients

1 lb large shrimp, peeled and deveined

1 bunch asparagus, trimmed and cut into 2-inch pieces

4 tablespoons unsalted butter

4 cloves garlic, minced

1 teaspoon red pepper flakes (optional)

Juice of 1 lemon

1 teaspoon lemon zest

Salt and freshly ground black pepper, to taste

2 cups cooked rice (white, brown, or cauliflower for a low-carb option)

Fresh parsley, chopped, for garnish

Lemon wedges, for serving

Instructions

Prepare the Asparagus: In a large skillet over medium-high heat, melt 2 tablespoons of butter. Add the asparagus pieces and sauté for about 3-4 minutes until they are tender yet crisp. Season with a pinch of salt and pepper. Once cooked, remove the asparagus from the pan and set aside.

Cook the Shrimp: In the same skillet, add the remaining 2 tablespoons of butter. Once melted, add the minced garlic and red pepper flakes (if using). Sauté for about 30 seconds until fragrant.

Add the Shrimp: Add the shrimp to the skillet and cook for 2-3 minutes on one side until slightly pink, then flip and cook for another 1-2 minutes until fully cooked.

Combine Ingredients: Once the shrimp is cooked, return the asparagus to the skillet. Squeeze the lemon juice over the mixture and sprinkle in the lemon zest. Stir everything gently to combine and heat through. Taste and adjust seasoning with additional salt and pepper if needed.

Assemble the Bowls: In individual serving bowls, place a generous scoop of cooked rice at the bottom. Top with the garlic butter shrimp and asparagus mixture, ensuring to include all the flavorful juices from the pan.

Garnish and Serve: Sprinkle chopped fresh parsley over each bowl for a pop of color and flavor. Serve with lemon wedges on the side for an extra splash of freshness.
