Garlic Butter Corn Ribs

4 large ears of fresh corn

1/2 cup unsalted butter, melted

5 cloves garlic, minced

1 tablespoon fresh parsley, chopped (plus more for garnish)

1 teaspoon smoked paprika

1/2 teaspoon crushed red pepper flakes (adjust to taste)

Salt and pepper, to taste

Zest of 1 lemon

Juice of 1 lemon

Instructions
 

Prepare the Corn: Start by husking the corn and removing all silk. Using a sharp knife, carefully cut each ear of corn into quarters lengthwise to create 'ribs'. You should have a total of 16 corn ribs.

    Make the Garlic Butter: In a mixing bowl, combine the melted butter, minced garlic, chopped parsley, smoked paprika, crushed red pepper flakes, salt, pepper, lemon zest, and lemon juice. Mix well until all ingredients are combined.

      Preheat the Grill or Oven: If grilling, preheat your grill to medium-high heat. If using an oven, preheat it to 425°F (220°C).

        Coat the Corn Ribs: Brush the garlic butter mixture generously onto the corn ribs, ensuring all sides are coated. Reserve some of the mixture for basting during cooking.

          Cooking the Corn Ribs:

            - On the Grill: Place the corn ribs on the grill grates. Cook for about 10-15 minutes, turning occasionally and basting with the reserved garlic butter mixture until there are nice grill marks and the corn is tender.

              - In the Oven: Arrange the corn ribs on a baking sheet lined with parchment paper. Roast for 20-25 minutes, flipping halfway through and basting with the reserved butter until they are golden and tender.

                Garnish and Serve: Once cooked, remove the corn ribs from the grill or oven. Sprinkle with additional fresh parsley and a squeeze of lemon juice for extra brightness. Serve warm as a side or appetizer!
