Ingredients

2 cups vanilla yogurt (Greek or regular)

1 cup cold brewed coffee

1/4 cup honey or maple syrup (adjust for sweetness)

1 tsp vanilla extract

1/2 tsp ground cinnamon

1/2 cup granola (for topping)

1/4 cup dark chocolate chips (optional)

Instructions

Prepare the Coffee: Brew a strong cup of coffee using your preferred method. Once brewed, let it cool to room temperature, then refrigerate until cold. If using cold brew coffee, skip this step.

Mix the Base: In a large mixing bowl, combine the vanilla yogurt, cold brewed coffee, honey or maple syrup, vanilla extract, and ground cinnamon. Mix well until all ingredients are fully incorporated and the mixture is smooth.

Prepare the Dish: Line an 8x8 inch baking dish with parchment paper, allowing some overhang for easy removal later. This will serve as the mold for your squares.

Pour and Spread: Pour the yogurt-coffee mixture into the prepared baking dish, spreading it out evenly with a spatula.

Add Toppings: Sprinkle the granola evenly over the top of the mixture. If you like a bit of chocolate, add dark chocolate chips over the granola for an extra tasty treat.

Freeze: Cover the baking dish with plastic wrap or foil and place it in the freezer. Freeze for at least 4-6 hours, or until the mixture is completely firm.

Cut into Squares: Once frozen solid, remove the dish from the freezer. Use the overhanging parchment paper to lift the block out of the dish. Cut into squares of your preferred size.

Serve: Enjoy the squares immediately or store them in an airtight container in the freezer for up to a month. Perfect for a refreshing snack or dessert!
