2 cups Greek yogurt (plain or vanilla)

1 cup fresh raspberries (plus extra for garnishing)

1 cup mixed nuts (almonds, walnuts, and pecans, roughly chopped)

2 tablespoons honey or maple syrup (adjust based on sweetness preference)

1 teaspoon vanilla extract

Pinch of sea salt

Cooking spray or silicone muffin tray for easy release

Prepare the Raspberry Mixture: In a blender, combine the fresh raspberries, honey (or maple syrup), vanilla extract, and a pinch of sea salt. Blend until smooth. You can also leave some chunks if you prefer a bit of texture.

    Mix the Yogurt Base: In a medium bowl, combine the Greek yogurt with the raspberry mixture. Stir gently until fully incorporated, ensuring there are still swirls of raspberry throughout.

      Add the Nuts: Fold in the chopped mixed nuts into the yogurt-raspberry mixture. Make sure the nuts are evenly distributed.

        Mold the Bites: Lightly spray a silicone muffin tray or mini muffin tray with cooking spray for easy removal. Spoon the yogurt mixture into the molds, filling them about ¾ of the way full.

          Freeze Until Firm: Place the filled tray in the freezer for at least 4 hours or until the bites are completely frozen.

            Release and Serve: Once frozen, gently pop the bites out of the tray. If using a silicone mold, run warm water over the outside of the mold for easier release. Arrange the Raspberry Nut Delight Bites on a serving platter, garnishing with extra fresh raspberries for presentation.
