Frozen Yogurt Pistachio Granola Bars

Ingredients
  

1 cup Greek yogurt (plain or vanilla)

1/2 cup honey or maple syrup

1 cup rolled oats

1/2 cup pistachios, shelled and roughly chopped

1/4 cup dried cranberries or cherries

1/4 cup almond butter

1 tsp vanilla extract

1/2 tsp sea salt

1/4 cup chocolate chips (optional)

1/4 cup shredded coconut (optional)

Instructions
 

Prepare the Base: In a medium bowl, add the Greek yogurt, honey (or maple syrup), almond butter, vanilla extract, and sea salt. Mix until smooth and fully combined.

    Combine Dry Ingredients: In a large mixing bowl, combine the rolled oats, chopped pistachios, dried cranberries, (and shredded coconut if using). Stir gently to mix all the dry ingredients together.

      Mix Wet and Dry: Pour the yogurt mixture into the bowl with the dry ingredients. Stir until everything is well coated. If using, fold in the chocolate chips for an extra touch of sweetness.

        Prepare the Pan: Line an 8x8-inch square pan with parchment paper, allowing for some overhang on the sides for easy removal. Lightly grease the parchment paper with a little olive oil or non-stick cooking spray.

          Spread Mixture in Pan: Transfer the mixture to the prepared pan. Using the back of a spatula or your hands, evenly spread and press the mixture down firmly. Make sure it is compact to prevent crumbling later.

            Freeze: Cover the pan with plastic wrap and place it in the freezer for at least 2 hours, or until completely set.

              Cut Bars: Once frozen, remove the mixture using the parchment paper overhang. Place it on a cutting board and cut into bars of your preferred size.

                Store or Serve: If not serving immediately, wrap the bars individually in wax paper or store them in an airtight container in the freezer for up to one month. Enjoy them straight from the freezer for a refreshing treat!
