1 cup shelled pistachios (lightly toasted if preferred)

1/4 cup honey or maple syrup

1/2 teaspoon vanilla extract

1/4 teaspoon salt

3/4 cup rolled oats

1/4 cup shredded coconut (unsweetened for a healthier option)

Optional: dark chocolate chips or cacao nibs for added indulgence

Prep Ingredients: Begin by toasting your pistachios in a dry skillet over medium heat for about 3-4 minutes until they're fragrant. Allow them to cool, then chop them roughly.

    Mix Dry Ingredients: In a large mixing bowl, combine the rolled oats, chopped pistachios, shredded coconut, and salt. Stir well to ensure all dry ingredients are evenly distributed.

      Combine Yogurt Mixture: In a separate bowl, whisk together the Greek yogurt, honey (or maple syrup), and vanilla extract until smooth and well combined.
