2 cups vanilla yogurt (Greek or regular)

1/2 cup cookie butter (speculoos spread)

1/4 cup honey or maple syrup

1 teaspoon vanilla extract

1/2 cup crushed graham crackers (for the crunch)

1/4 cup mini chocolate chips (optional)

1/4 cup chopped nuts (e.g., almonds or pecans) (optional)

8 popsicle molds and sticks

Instructions
 

Prepare the Base: In a large mixing bowl, combine the vanilla yogurt, cookie butter, honey (or maple syrup), and vanilla extract. Whisk until the mixture is smooth and well combined.

    Add Crunch: Gently fold in the crushed graham crackers, mini chocolate chips, and chopped nuts (if using). Ensure that the mix is evenly distributed but be careful not to over-mix.

      Pour into Molds: Using a spoon or a ladle, fill your popsicle molds with the yogurt-cookie butter mixture. Leave some space at the top to allow for expansion as they freeze.

        Insert Sticks: Carefully press the popsicle sticks into the center of each mold. Make sure they stand upright.

          Freeze: Place the molds in the freezer and allow them to freeze for at least 4-6 hours, or until solid. For best results, freeze overnight.

            Unmold Pops: Once frozen, run the molds under warm water for a few seconds to loosen the pops. Carefully pull each pop out of its mold.
