Frozen Yogurt Coconut Cookie Rounds

1 cup shredded coconut (unsweetened)

1 cup almond flour

1/2 cup rolled oats

1/3 cup honey or maple syrup

1/4 cup coconut oil, melted

1/2 teaspoon vanilla extract

1/4 teaspoon salt

1 cup plain Greek yogurt (or dairy-free alternative)

1/4 cup shredded coconut (for topping)

Fresh fruit (such as blueberries or mango) for garnish (optional)

Instructions
 

Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.

    In a mixing bowl, combine the shredded coconut, almond flour, rolled oats, honey or maple syrup, melted coconut oil, vanilla extract, and salt. Mix well until all ingredients are thoroughly combined and the mixture is slightly sticky.

      Scoop tablespoon-sized portions of the mixture onto the prepared baking sheet, flattening them slightly to form round cookie shapes. Press them down gently with your hands or the back of a spoon to ensure they hold together.

        Bake the cookie rounds in the preheated oven for about 12-15 minutes, or until they are golden brown on the edges. Keep an eye on them to avoid over-baking.

          Remove the cookie rounds from the oven and let them cool on the baking sheet for about 10 minutes before transferring them to a wire rack to cool completely.
