2 cups plain Greek yogurt

1 cup finely grated carrots (about 2 medium carrots)

1/2 cup crushed pineapple, drained

1/4 cup honey or maple syrup

1 teaspoon vanilla extract

1 teaspoon ground cinnamon

1/4 teaspoon nutmeg

1/4 teaspoon ginger powder

1/4 cup chopped walnuts or pecans (optional)

Pinch of salt

Optional toppings: shredded coconut, raisins, or additional nuts

Instructions
 

Prepare the Carrots: Start by finely grating the carrots using a box grater or food processor. Ensure they are well-drained to remove excess moisture.

    Mix the Yogurt: In a large mixing bowl, combine the Greek yogurt, grated carrots, crushed pineapple, honey (or maple syrup), and vanilla extract. Mix well using a spatula until the ingredients are well incorporated.

      Add Spices: Sprinkle in the ground cinnamon, nutmeg, ginger powder, and a pinch of salt. Fold these into the yogurt mixture until everything is evenly distributed. If using nuts, gently fold them in at this stage.

        Portion the Mixture: Line a baking sheet with parchment paper. Using a cookie scoop or tablespoons, portion out the yogurt mixture onto the prepared baking sheet, forming small coins (approximately 2 inches in diameter). Each scoop should be about 1.5 tablespoons.

          Freeze: Place the baking sheet in the freezer and freeze the yogurt coins for at least 4 hours or until solid.

            Serve: Once frozen, remove the coins from the parchment paper and arrange on a serving platter. You can also drizzle with a little extra honey and sprinkle with desired toppings like shredded coconut, raisins, or more nuts.

              Storage: Store any leftover coins in an airtight container in the freezer for up to 2 weeks. Enjoy them directly from the freezer as a refreshing treat!
