Ingredients

Crust:

1 ½ cups graham cracker crumbs

⅓ cup granulated sugar

½ cup unsalted butter, melted

Filling:

2 cups plain Greek yogurt

1 cup cream cheese, softened

⅓ cup granulated sugar

1 tsp vanilla extract

1 cup mixed berries (blueberries, raspberries, strawberries), fresh or frozen

Topping:

½ cup mixed berries (for garnish)

Mint leaves (optional, for garnish)

Instructions

Prepare the Crust:

    - In a mixing bowl, combine graham cracker crumbs and granulated sugar.

      - Add the melted butter and mix until the mixture resembles wet sand.

        - Press the crust mixture evenly into the bottom of an 8x8-inch baking pan lined with parchment paper, creating a packed layer. Set aside.

          Make the Filling:

            - In a large bowl, beat the softened cream cheese until smooth using an electric mixer.

              - Add the Greek yogurt, sugar, and vanilla extract to the bowl. Beat until the mixture is well combined and creamy, ensuring there are no lumps.

                Add the Berries:

                  - Gently fold in 1 cup of mixed berries into the cheesecake filling. If using frozen berries, ensure they’re thawed and drained before adding them to prevent excess liquid.

                    Assemble the Bars:

                      - Spoon the cheesecake filling over the prepared crust in the baking pan, spreading it evenly.

                        - Optionally, sprinkle a few additional berries on top of the filling for decoration.

                          Freeze:

                            - Cover the baking pan with plastic wrap or aluminum foil and place it in the freezer.

                              - Freeze for at least 4 hours or until completely solid.

                                Serve:

                                  - Once frozen, remove the cheesecake bars from the pan using the parchment paper overhang.

                                    - Cut into squares or bars and garnish with fresh mixed berries and mint leaves, if desired.

                                      Enjoy:

                                        - Serve immediately or store any leftovers in an airtight container in the freezer for up to 2 weeks.
