1 ½ cups plain Greek yogurt

¾ cup unsweetened applesauce

¼ cup honey or maple syrup

1 tsp vanilla extract

1 tsp ground cinnamon

1/4 tsp nutmeg

1 cup finely chopped apples (Granny Smith or Honeycrisp)

1 ½ cups gluten-free or regular all-purpose flour

1 tbsp baking powder

1/4 tsp salt

¼ cup brown sugar

2 large eggs

⅓ cup melted coconut oil or butter

1 cup crushed graham crackers (for topping)

½ cup finely chopped walnuts or pecans (optional)

Instructions
 

Prepare the Yogurt Mixture: In a mixing bowl, combine the Greek yogurt, applesauce, honey (or maple syrup), vanilla extract, ground cinnamon, and nutmeg. Mix until smooth and set aside.

    Combine Dry Ingredients: In a separate bowl, whisk together the flour, baking powder, salt, and brown sugar until evenly mixed.

      Combine Wet Ingredients: In another bowl, beat the eggs and then add the melted coconut oil (or butter), mixing well.

        Mix Together: Add the dry ingredients to the wet ingredients, stirring until just combined. Then gently fold in the yogurt mixture and chopped apples until everything is well incorporated.

          Preheat the Oven: Preheat your oven to 350°F (175°C) and lightly grease a donut pan with cooking spray or coconut oil.

            Fill the Donut Pan: Use a piping bag or a ziplock bag with the corner cut off to pipe the batter into the donut pan, filling each mold about ¾ full.

              Bake the Donuts: Place the donut pan in the preheated oven and bake for 12-15 minutes, or until the donuts are golden brown and a toothpick inserted into the center comes out clean.

                Cool and Prepare for Freezing: Allow the donuts to cool for about 10 minutes before removing them from the pan. Once cooled, place the donuts on a wire rack to completely cool.
