For the Strawberry Layer:

2 cups fresh strawberries, hulled and sliced

2 tablespoons honey (or maple syrup for a vegan option)

1 tablespoon lemon juice

1 tablespoon cornstarch

For the Cake Layer:

1 cup all-purpose flour

½ cup granulated sugar

½ teaspoon baking powder

¼ teaspoon salt

½ cup unsalted butter, melted (or coconut oil for a vegan option)

1 large egg (or flaxseed egg for a vegan option)

1 teaspoon vanilla extract

¼ cup milk (dairy or plant-based)

For the Whipped Topping:

1 cup heavy whipping cream (or coconut cream for a vegan option)

2 tablespoons powdered sugar

1 teaspoon vanilla extract

Prepare the Strawberry Layer: In a medium saucepan, combine the sliced strawberries, honey, lemon juice, and cornstarch over medium heat. Cook for about 5 minutes, stirring occasionally, until the strawberries soften and the mixture thickens slightly. Remove from heat and let it cool.

    Make the Cake Layer: Preheat your oven to 350°F (175°C). In a large bowl, whisk together the flour, sugar, baking powder, and salt. In another bowl, mix the melted butter, egg, vanilla extract, and milk until well combined. Gradually add the wet ingredients to the dry ingredients, stirring until just combined.

      Assemble in a Pan: Line an 8x8 inch baking dish with parchment paper. Pour half of the cake batter into the prepared dish and spread it evenly. Next, layer the cooled strawberry mixture over the cake batter. Finally, pour the remaining cake batter on top of the strawberries, gently spreading it to cover.

        Bake the Layered Cake: Bake in the preheated oven for 25-30 minutes, or until a toothpick inserted into the center comes out clean. Allow it to cool completely in the pan.

          Prepare the Whipped Cream Topping: In a mixing bowl, beat the heavy whipping cream with powdered sugar and vanilla extract on medium-high speed until stiff peaks form.

            Layer the Bars: Once the cake is completely cooled, spread the whipped cream topping evenly over the cake. Place the dish in the freezer for at least 4 hours or until completely frozen.

              Serve the Bars: Once frozen, lift the dessert out of the pan using the parchment paper. Cut into bars and enjoy! Allow the bars to sit at room temperature for a few minutes before serving for easier slicing.
