Frozen Raspberry Coconut Ice Pops

Ingredients
  

2 cups fresh or frozen raspberries

1 cup coconut milk (canned for creaminess)

1/2 cup natural yogurt (Greek or plant-based)

1/4 cup honey, maple syrup, or agave nectar (adjust to taste)

1 teaspoon vanilla extract

1/4 teaspoon sea salt

Optional: toasted coconut flakes for garnish

Instructions
 

Prepare the Raspberry Puree: If using fresh raspberries, rinse them thoroughly. In a blender, add the raspberries and blend until smooth. If you prefer a chunkier texture, you can reserve a few raspberries to fold in later.

    Mix the Coconut Base: In a separate bowl, combine the coconut milk, yogurt, honey (or your choice of sweetener), vanilla extract, and sea salt. Whisk until the mixture is well combined and smooth.

      Layer the Mixtures: For a swirled effect, pour a small amount of the coconut mixture into the bottom of ice pop molds (about 1/3 full). Follow this with a layer of raspberry puree (about 1/3 full again), and then top with more coconut mixture until the molds are filled to the top.

        Swirl (Optional): If you’re feeling creative, use a skewer or a chopstick to gently swirl the mixtures together for a marbled effect. Be careful not to overmix.

          Insert Sticks: Place the ice pop sticks in the centers of the molds, making sure they are stable.

            Freeze: Transfer the molds to the freezer and let them freeze for at least 4-6 hours or until completely solid.

              Unmold the Ice Pops: To remove the ice pops from the molds, run warm water over the outside of the mold for a few seconds to loosen them. Gently pull the sticks to remove the pops.

                Serve and Enjoy: Garnish with toasted coconut flakes if desired, and enjoy these refreshing treats on a warm day!
