Frozen Pineapple Yogurt Crunch Bars

2 cups frozen pineapple chunks

1 cup Greek yogurt (vanilla or plain)

1/4 cup honey or maple syrup

1 cup granola (your choice, plain or flavored)

1/2 cup shredded coconut (sweetened or unsweetened)

1/4 teaspoon salt

Optional toppings: chopped nuts, chocolate chips, fresh fruit slices

Instructions
 

Blend the Base: In a blender or food processor, combine the frozen pineapple chunks, Greek yogurt, honey or maple syrup, and salt. Blend until smooth and creamy. If needed, scrape down the sides for even blending.

    Prepare the Pan: Line an 8x8 inch (or equivalent) square baking dish with parchment paper, leaving a bit of an overhang on the sides for easy removal later.

      Layer the Mixture: Pour the blended pineapple yogurt mixture into the prepared baking dish, smoothing it out evenly with a spatula.

        Add the Crunch: Sprinkle the granola and shredded coconut over the top of the yogurt mixture, gently pressing them into the surface to ensure they stick.

          Freeze: Place the dish in the freezer and let it freeze for at least 4 hours, or until completely firm.

            Slice and Serve: Once frozen, remove the bars from the dish by lifting them out using the parchment paper overhang. Slice into squares or rectangles. For an extra touch, drizzle some melted chocolate on top or add fresh fruit slices.
