2 large ripe mangoes, peeled and diced

1 cup coconut milk (preferably full-fat for creaminess)

1/2 cup coconut cream

1/4 cup honey or maple syrup (adjust to taste)

1 teaspoon vanilla extract

1 tablespoon lime juice

Pinch of salt

Toasted coconut flakes, for garnish

Fresh mint leaves, for garnish (optional)

Instructions
 

Prepare the Mango: In a blender, combine the diced mangoes, lime juice, and a pinch of salt. Blend until smooth and set aside.

    Make Coconut Cream: In a mixing bowl, whisk together the coconut milk, coconut cream, honey (or maple syrup), and vanilla extract until well combined and creamy.

      Layer the Mixture: Prepare silicone muffin cups or small dessert cups. Start by adding a spoonful of the coconut cream mixture to the bottom of each cup. Then layer in a generous spoonful of the mango puree, followed by another layer of the coconut cream.

        Repeat and Finish: Alternate layers until the cups are nearly full, finishing with a layer of coconut cream on top.

          Freeze: Place the cups in the freezer for about 4-6 hours or until completely frozen.

            Serve: Once frozen, run warm water over the outside of the cups for a few seconds to loosen them. Carefully remove the frozen mango coconut cream cups from the molds.

              Garnish and Enjoy: Sprinkle with toasted coconut flakes and garnish with fresh mint leaves if desired. Serve immediately for a refreshing treat!
