1 ripe mango, peeled and diced

1 cup coconut yogurt (dairy-free if preferred)

1/2 cup coconut milk

2 tablespoons honey or maple syrup (adjust based on sweetness preference)

1 teaspoon vanilla extract

A pinch of sea salt

Fresh mint leaves for garnish (optional)

Instructions
 

Prepare the Mango: In a blender, add the diced mango. Blend until you achieve a smooth puree, scraping down the sides as necessary.

    Mix the Yogurt Base: In a medium mixing bowl, combine the coconut yogurt, coconut milk, honey or maple syrup, vanilla extract, and a pinch of sea salt. Whisk until the mixture is well combined and smooth.

      Layer the Mixture: Pour about 1 tablespoon of the yogurt mixture into the bottom of your popsicle molds. Next, add a layer of mango puree, using about 1 tablespoon. Repeat the layering process until the molds are filled, leaving a little space at the top as they will expand when frozen.

        Insert Sticks: Place the popsicle sticks into each mold, making sure they’re positioned in the center.

          Freeze: Carefully transfer the molds to the freezer and freeze for at least 4-6 hours, or until fully set.

            Unmold the Pops: Once frozen, remove the molds from the freezer. To easily release the pops, run warm water over the outside of the mold for a few seconds. Gently pull the sticks to release the yogurt sticks.

              Garnish and Serve: If desired, garnish with fresh mint leaves for a refreshing touch. Serve immediately and enjoy the tropical flavors!
