1 cup graham cracker crumbs

1/4 cup granulated sugar

1/2 cup unsalted butter, melted

For the filling:

1 can (14 oz) full-fat coconut milk

1/2 cup sweetened condensed milk

1/2 cup freshly squeezed lime juice (about 4-5 limes)

Zest of 2 limes

1/4 cup granulated sugar

1/4 teaspoon salt

1 cup shredded coconut (unsweetened or sweetened, based on preference)

For garnish:

Lime slices

Toasted coconut flakes (optional)

Preheat the Oven: Begin by preheating your oven to 350°F (175°C).

    Prepare the Crust: In a medium bowl, combine the graham cracker crumbs, granulated sugar, and melted butter. Mix until all the crumbs are evenly coated and resemble wet sand.

      Press the Crust: Pour the crumb mixture into a 9x9-inch baking dish lined with parchment paper, pressing down firmly with the back of a measuring cup to form an even crust. Bake in the preheated oven for 8-10 minutes, or until lightly golden. Remove and let cool.

        Make the Filling: In a large mixing bowl, whisk together the full-fat coconut milk, sweetened condensed milk, freshly squeezed lime juice, lime zest, granulated sugar, and salt until completely smooth.

          Add Coconut: Gently fold in the shredded coconut until well combined.

            Combine and Bake Again: Pour the coconut-lime filling over the cooled crust. Smooth the top with a spatula and return to the oven. Bake for an additional 20-25 minutes, or until the filling is set and slightly pulling away from the edges.

              Cool and Freeze: Remove the bars from the oven and allow them to cool at room temperature for about 30 minutes. Once cooled, transfer the baking dish to the refrigerator for at least 2 hours, or until completely chilled. For the ultimate texture, freeze the bars for at least an hour.
