Frozen Carrot Cake Cream Bites

1 cup finely grated carrots (about 2 medium-sized carrots)

1 cup crushed pineapple, drained

1/2 cup unsweetened applesauce

1/4 cup brown sugar

1/4 cup granulated sugar

1/2 cup all-purpose flour

1 tsp baking soda

1 tsp ground cinnamon

1/2 tsp ground nutmeg

1/4 tsp ground ginger

1/4 tsp salt

1/2 cup chopped walnuts or pecans (optional)

1/2 cup cream cheese, softened

1/4 cup powdered sugar

1/4 tsp vanilla extract

1/2 cup white chocolate chips (for coating)

Instructions
 

Prep the Carrots: Start by peeling and finely grating the carrots. You should get about one cup of grated carrots. Set aside.

    Mix Wet Ingredients: In a large mixing bowl, combine the grated carrots, drained crushed pineapple, applesauce, brown sugar, and granulated sugar. Stir until the mixture is well blended.

      Combine Dry Ingredients: In a separate bowl, whisk together the flour, baking soda, ground cinnamon, nutmeg, ginger, and salt. Gradually mix the dry ingredients into the wet mixture until combined. If desired, fold in the chopped walnuts or pecans.

        Form Bites: Line a baking sheet with parchment paper. Using a tablespoon, scoop out small portions of the carrot cake batter and roll them into bite-sized balls. Place each ball onto the prepared baking sheet. Repeat until all the batter is used.

          Freeze Until Firm: Place the baking sheet with the carrot cake bites in the freezer for about 2 hours, or until the bites are frozen solid.

            Prepare Cream Cheese Mixture: While the bites are freezing, beat together the softened cream cheese, powdered sugar, and vanilla extract in a small bowl until smooth and creamy.                 Final Freeze: Place the chocolate-coated bites back into the freezer for an additional 30 minutes to set the chocolate.
