Frozen Berry Swirl Chia Squares

Ingredients
  

1 cup chia seeds

4 cups almond milk (or any plant-based milk)

1/4 cup maple syrup (or honey)

1 teaspoon vanilla extract

2 cups mixed berries (fresh or frozen - blueberries, raspberries, strawberries)

1 tablespoon lemon juice

1 tablespoon cornstarch (optional, for thickening)

Pinch of salt

Combine the Base: In a large mixing bowl, whisk together the chia seeds, almond milk, maple syrup, vanilla extract, and salt. Make sure there are no clumps of chia seeds. Let the mixture sit for about 10-15 minutes until it starts to thicken.

    Prepare Berry Swirl: While the chia mixture is thickening, prepare the berry swirl. In a small saucepan over medium heat, combine the mixed berries, lemon juice, and cornstarch (if using). Stir occasionally until the berries break down and start to form a sauce, about 5-7 minutes. Remove from heat and allow it to cool slightly.

      Layer the Mixture: Once the chia mixture has thickened, stir it again to ensure it's well combined. In a square baking dish (8x8 inches), pour in half of the chia mixture, spreading it evenly.

        Add the Berry Sauce: Spoon the berry sauce over the chia layer, aiming to distribute it evenly but not completely mixing it in. Pour the remaining chia mixture over the top, using a spatula to smooth it out.

          Create the Swirl: Using a knife or skewer, gently swirl the berry sauce through the chia mixture to create a marbled effect.

            Freeze: Cover the baking dish with plastic wrap or a lid and place it in the freezer. Allow it to freeze for at least 4 hours, or until fully solid.

              Serve: Once frozen, remove from the freezer and let it sit at room temperature for about 5-10 minutes for easier cutting. Cut into squares and serve! Enjoy as a refreshing snack or dessert.
