Frozen Berry Lemonade Bars

1 ½ cups mixed berries (fresh or frozen)

1 cup granulated sugar

1 cup freshly squeezed lemon juice (about 6-8 lemons)

2 cups water

½ cup sweetened condensed milk

Zest of 2 lemons

1 tsp vanilla extract

1 cup whipped cream (optional, for serving)

Extra berries and lemon slices for garnish

Prepare the Berries: If using fresh berries, wash them thoroughly. If using frozen, allow them to thaw for a while for easier blending.

    Blend the Mixture: In a blender, combine the berries, sugar, lemon juice, water, sweetened condensed milk, lemon zest, and vanilla extract. Blend on high until smooth.

      Strain the Mixture (optional): For a smoother texture, strain the blended mixture through a fine-mesh sieve into a large bowl, pressing the mixture with a spoon to extract as much liquid as possible and discard the solids.

        Pour into Pan: Pour the berry lemonade mixture into a 9x9 inch (or similar size) baking dish. Smooth out the top with a spatula.

          Freeze: Cover the dish with plastic wrap and freeze for at least 4-6 hours, or until fully set.

            Cut and Serve: Once frozen, remove from the freezer and let it sit for about 5-10 minutes before cutting for easier slicing. Cut into bars or squares as desired.
