Ingredients

2 ripe bananas

1/2 cup creamy peanut butter (or almond butter for a twist)

1/4 cup dark chocolate chips (optional)

1 tablespoon coconut oil (optional, for smoother chocolate coating)

1/2 cup granola or chopped nuts (for added crunch, optional)

Sea salt (for topping, optional)

Instructions

Prep the Bananas: Peel the bananas and slice them into approximately 1-inch thick rounds. Arrange the banana pieces on a parchment-lined baking sheet.

Spread the Peanut Butter: Using a small spoon or a knife, spread a generous dollop of peanut butter onto half of the banana slices. Top with another slice to create a ‘sandwich’ and gently press them together. Repeat until all banana slices are used.

Freeze the Bites: Place the banana sandwiches in the freezer for about 1-2 hours, or until they are frozen solid. This helps them hold together when you dip them in chocolate.

Melt the Chocolate (if using): In a microwave-safe bowl, combine the dark chocolate chips and coconut oil. Heat in the microwave in 15-second intervals, stirring in between, until melted and smooth.

Dip the Bites: Remove the frozen banana sandwiches from the freezer. One by one, dip each bite into the melted chocolate, allowing any excess to drip off. If you want to add granola or chopped nuts, sprinkle them on top immediately while the chocolate is still wet.

Add Sea Salt (optional): For an extra flavor boost, sprinkle a tiny pinch of sea salt on top of each chocolate-dipped bite before the chocolate hardens.

Final Freeze: Return the chocolate-dipped bites to the parchment-lined baking sheet and place them back in the freezer for an additional 30 minutes to set the chocolate completely.

Serve and Enjoy: Once the chocolate has set, transfer the Frozen Banana Peanut Butter Bites to an airtight container. They can be stored in the freezer for up to a month. When you’re ready to enjoy, simply grab a few and indulge in this delightful treat!
