Ingredients

2 cups unsweetened Greek yogurt

1 medium apple, finely chopped (use your favorite variety)

1/2 cup walnuts, chopped

2 tablespoons honey or maple syrup (adjust to taste)

1 teaspoon vanilla extract

1 teaspoon cinnamon

Pinch of salt

Optional: additional toppings (such as mini chocolate chips, shredded coconut, or dried fruit)

Instructions

Prepare the Apple: Core the apple and chop it into small pieces. If desired, you can peel the apple for a smoother texture.

Mix the Base: In a mixing bowl, combine the Greek yogurt, honey (or maple syrup), vanilla extract, cinnamon, and a pinch of salt. Stir until all ingredients are well mixed and the mixture is smooth.

Incorporate Add-Ins: Gently fold in the chopped apple and walnuts into the yogurt mixture until evenly distributed. If you want to add any optional toppings like mini chocolate chips or shredded coconut, now is the time to add them.

Scoop and Shape: Line a baking sheet with parchment paper. Using a tablespoon or small ice cream scoop, drop dollops of the yogurt mixture onto the prepared baking sheet, spacing them about 2 inches apart to allow for slight spreading.

Freeze: Place the baking sheet in the freezer and freeze the yogurt discs for about 3-4 hours, or until fully frozen.

Store or Serve: Once frozen, remove the discs from the baking sheet. You can either keep them in a freezer-safe container or enjoy them immediately. If storing, layer the discs between parchment paper in the container to prevent sticking.
