Traditionally drizzled with olive oil and seasoned with salt, the Caprese salad is a celebration of the Mediterranean diet's emphasis on fresh, seasonal ingredients. Ingredients

2 slices of rustic sourdough bread

1 large ripe heirloom tomato, sliced

1 ball of fresh burrata cheese

A handful of fresh basil leaves

2 tablespoons of extra virgin olive oil

1 teaspoon balsamic glaze

Sea salt, to taste

Freshly ground black pepper, to taste

Instructions

Toast the Bread: Start by preheating your grill or a skillet over medium heat. Lightly brush each slice of sourdough bread with a tablespoon of olive oil. Once the skillet is warm, add the bread slices and toast until golden and crispy, about 2-3 minutes on each side. Remove from heat.

Prepare the Tomato: While the bread is toasting, wash the heirloom tomato and slice it into thick, even rounds. If the tomatoes are particularly juicy, you can gently pat them dry with a paper towel.

Assemble the Sandwich: On one slice of the toasted sourdough, layer the sliced tomatoes evenly, ensuring a generous coverage. Tear the burrata cheese ball apart and distribute the creamy interior across the tomato slices.

Add Fresh Basil: Tuck whole basil leaves between the layers of tomato and burrata, allowing their aroma to infuse into the sandwich.

Dress It Up: Drizzle the remaining extra virgin olive oil over the assembled sandwich. Follow this with a drizzle of balsamic glaze for a sweet tangy touch.

Season: Finish with a sprinkle of sea salt and freshly ground black pepper to enhance the flavors of the fresh ingredients.

Top It Off: Place the other slice of toasted sourdough on top to create your sandwich. Press down gently to secure everything in place.

Serve: Cut the sandwich in half and serve immediately, with a side of mixed greens or homemade chips for a delightful lunch or light dinner option.
