1 cup all-purpose flour

2 tablespoons sugar

1 tablespoon baking powder

1 teaspoon baking soda

1 teaspoon ground cinnamon

1 cup pumpkin puree (not pumpkin pie filling)

3/4 cup milk (dairy or non-dairy)

1 large egg

2 tablespoons melted butter (or coconut oil)

1 teaspoon vanilla extract

Prepare the Dry Ingredients: In a large mixing bowl, whisk together the flour, sugar, baking powder, baking soda, spices (cinnamon, nutmeg, ginger, and cloves), and salt until well combined. Set aside.

    Combine Wet Ingredients: In a separate bowl, mix the pumpkin puree, milk, egg, melted butter, and vanilla extract until smooth and uniform.

      Combine Mixtures: Pour the wet mixture into the dry ingredients and gently fold them together using a spatula. Be careful not to over-mix; it’s okay if there are a few lumps remaining. The batter should be thick and fluffy.

        Preheat the Griddle: Heat a non-stick skillet or griddle over medium heat. Lightly grease it with cooking spray or additional melted butter.

          Cook the Pancakes: Once the skillet is hot, pour about 1/4 cup of batter for each pancake onto the skillet. Cook for about 3-4 minutes until bubbles form on the surface and the edges appear set. Flip the pancakes and cook for an additional 2-3 minutes on the other side until golden brown.
