1 cup all-purpose flour

1/2 cup cornmeal

2 tablespoons granulated sugar

1 tablespoon baking powder

1/2 teaspoon baking soda

1/2 teaspoon salt

1 1/2 cups buttermilk

1 large egg

3 tablespoons unsalted butter, melted (plus extra for cooking)

1 teaspoon vanilla extract

Instructions
 

Mix Dry Ingredients: In a large mixing bowl, combine the all-purpose flour, cornmeal, granulated sugar, baking powder, baking soda, and salt. Whisk together until well combined.

    Combine Wet Ingredients: In another bowl, whisk together the buttermilk, egg, melted butter, and vanilla extract until smooth.

      Combine Mixtures: Pour the wet ingredients into the dry ingredients. Stir gently with a spatula or wooden spoon until just combined. The batter may be a little lumpy; do not overmix. Let the batter sit for about 10 minutes to rest.

        Preheat Pan: While the batter rests, heat a non-stick skillet or griddle over medium heat. Add a small amount of butter and let it melt, coating the surface.
