Ingredients
  

2 tablespoons olive oil

1 medium onion, sliced

2 garlic cloves, minced

1 medium red bell pepper, sliced

1 medium yellow bell pepper, sliced

1 cup snap peas

1 cup broccoli florets

1 medium zucchini, sliced

1/4 cup fig jam

2 tablespoons soy sauce (or tamari for gluten-free)

1 tablespoon rice vinegar

1 tablespoon sesame oil

Salt and pepper to taste

Sesame seeds for garnish

Fresh cilantro for garnish (optional)

Instructions
 

Prepare the Vegetables: Wash and slice all the vegetables as per the ingredient list. This will ensure a quick cooking time during the stir-fry process.

    Heat the Oil: In a large wok or non-stick skillet, heat the olive oil over medium-high heat until shimmering.

      Sauté Aromatics: Add the sliced onion and cook for about 2 minutes until it begins to soften. Add the minced garlic and continue to sauté for another 30 seconds, being careful not to burn it.

        Stir-Fry the Veggies: Introduce the sliced bell peppers, snap peas, broccoli florets, and zucchini into the pan. Stir-fry the mixture for about 5-7 minutes, or until the vegetables are tender-crisp.

          Add Sauces: Reduce the heat to medium and pour in the fig jam, soy sauce, and rice vinegar. Stir well to coat the vegetables evenly in the sweet and savory sauce. Cook for another 2-3 minutes, allowing the sauce to bubble and thicken slightly.

            Finish & Season: Drizzle the sesame oil over the stir-fry, and season with salt and pepper to taste. Give everything one final toss to combine.

              Serve: Remove from heat and serve hot. Garnish with sesame seeds and fresh cilantro if desired.
