4 boneless, skinless chicken breasts

1 cup fig jam (store-bought or homemade)

1/4 cup balsamic vinegar

2 tablespoons olive oil

1 tablespoon Dijon mustard

1 teaspoon garlic powder

1 teaspoon onion powder

Salt and pepper to taste

Fresh rosemary sprigs (for garnish)

1 cup chicken broth

1 cup sliced mushrooms (optional)

1 cup baby spinach (optional)

Instructions
 

Prepare the Chicken: Season the chicken breasts on both sides with salt, pepper, garlic powder, and onion powder.

    Heat the Skillet: In a large skillet, heat the olive oil over medium-high heat. Once the oil is hot, add the chicken breasts. Sear for about 5-6 minutes on each side until golden brown and cooked through. Remove the chicken from the skillet and set aside.

      Make the Sauce: In the same skillet, add the sliced mushrooms (if using) and sauté for 3-4 minutes until tender. Pour in the balsamic vinegar and chicken broth, scraping up any bits stuck to the bottom of the pan. Stir in the fig jam and Dijon mustard, mixing until the sauce is well combined and slightly thickened.

        Combine Chicken and Sauce: Return the seared chicken breasts to the skillet, coating them with the fig jam sauce. Reduce the heat to low and let simmer for 5-7 minutes to meld the flavors.
