Fall Crockpot Turkey Meatball Soup

For the Meatballs:

1 lb ground turkey

1/4 cup breadcrumbs (preferably whole wheat)

1/4 cup grated Parmesan cheese

1 large egg

2 cloves garlic, minced

1 tsp dried Italian herbs (oregano, basil, thyme)

1/2 tsp salt

1/2 tsp black pepper

For the Soup:

4 cups low-sodium chicken broth

1 large onion, diced

3 carrots, sliced

2 celery stalks, diced

2 cups kale, chopped (or spinach)

1 can (14.5 oz) diced tomatoes (with juices)

1 tsp smoked paprika

1/2 tsp red pepper flakes (optional for heat)

1 bay leaf

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Instructions
 

Make the Meatballs: In a large mixing bowl, combine ground turkey, breadcrumbs, Parmesan cheese, egg, minced garlic, Italian herbs, salt, and pepper. Mix with your hands until just combined – do not overmix.

    Form the Meatballs: Roll the mixture into small meatballs, about 1 inch in diameter. You should get about 20-24 meatballs.

      Brown the Meatballs (Optional): In a skillet over medium heat, lightly brown the meatballs for about 2-3 minutes on each side. This step adds extra flavor but is optional if you're short on time.

        Prepare the Soup Base: Place the diced onion, sliced carrots, diced celery, chopped kale, diced tomatoes, smoked paprika, red pepper flakes, bay leaf, chicken broth, and salt & pepper in the crockpot. Stir to combine.

          Add the Meatballs: Gently place the meatballs into the crockpot, ensuring they’re submerged in the broth.

            Cook the Soup: Cover and cook on low for 6-8 hours or on high for 3-4 hours, until the vegetables are tender and the meatballs are cooked through.

              Final Touches: Once cooked, taste and adjust the seasoning if necessary. Remove the bay leaf before serving.
