Fall Crockpot Pasta with Turkey

1 lb ground turkey

1 medium onion, diced

3 cloves garlic, minced

1 cup carrots, diced

1 cup bell pepper (red or yellow), diced

1 can (15 oz) pumpkin puree

1 can (14.5 oz) diced tomatoes (with juices)

2 cups chicken broth

1 tbsp dried oregano

1 tsp ground cinnamon

1/2 tsp nutmeg

Salt and pepper to taste

3 cups uncooked pasta (penne or rotini)

1 cup shredded mozzarella cheese

Fresh parsley, chopped (for garnish)

Instructions
 

Sauté the Turkey: In a skillet over medium heat, add a splash of olive oil and sauté the ground turkey until browned (about 5-7 minutes). Season with salt and pepper. Break it apart as it cooks. Drain excess grease if needed.

    Prep the Slow Cooker: In a large crockpot, add the diced onion, minced garlic, diced carrots, and bell pepper. Stir in the browned turkey.

      Add the Pumpkin and Tomatoes: Pour the pumpkin puree and diced tomatoes into the crockpot. Mix well to combine all the ingredients.

        Add Broth and Spices: Pour in the chicken broth and sprinkle the oregano, cinnamon, and nutmeg over the mixture. Stir everything together and adjust the seasoning with more salt and pepper if necessary.

          Cook: Cover and cook on low for 6 hours or high for 3 hours.

            Add the Pasta: About 30 minutes before serving, stir in the uncooked pasta. Add more broth if needed to ensure the pasta has enough liquid to cook. Cover and allow to cook until the pasta is tender.

              Finish with Cheese: Once the pasta is cooked, sprinkle mozzarella cheese on top, cover again, and let it melt for about 5-10 minutes.

                Garnish and Serve: Spoon portions into bowls, garnish with fresh parsley, and enjoy your cozy fall meal!
