2 tablespoons olive oil

Salt and pepper, to taste

1 batch of homemade or store-bought pizza dough

1 cup marinara sauce

1 cup fresh mozzarella cheese, shredded

1 cup Hatch green chiles, roasted and diced (canned or fresh)

1 teaspoon smoked paprika

1 teaspoon garlic powder

½ cup feta cheese, crumbled

Fresh basil leaves, for garnish

Red pepper flakes, for garnish (optional)

Instructions
 

Prep the Eggplant: Start by preheating your oven to 400°F (200°C). Place the eggplant slices on a baking sheet lined with parchment paper. Drizzle with olive oil, and sprinkle with salt, pepper, and smoked paprika. Roast the eggplant for about 20 minutes, flipping halfway through, until tender and slightly browned.

    Prepare the Pizza Dough: If you're using homemade pizza dough, roll it out on a floured surface to your preferred thickness. If using store-bought, follow package instructions. Shape the dough into a round or rectangular pizza base and transfer to a pizza stone or baking sheet.
