Ingredients
  

2 medium-sized beets, roasted and peeled

1 large cucumber, thinly sliced

1 cup cherry tomatoes, halved

1/4 red onion, thinly sliced

1 avocado, diced

1/4 cup fresh parsley, chopped

2 tablespoons olive oil

1 tablespoon apple cider vinegar

1 teaspoon honey (or agave syrup for a vegan option)

Salt and pepper, to taste

Optional: 1/4 cup feta cheese, crumbled (omit for vegan)

Instructions
 

Prepare Beets: Preheat your oven to 400°F (200°C). Wrap beets in foil and roast for about 45-60 minutes or until they can be easily pierced with a fork. Once cool, peel and chop them into bite-sized cubes.

    Slice Vegetables: While the beets are roasting, thinly slice the cucumber and red onion, and halve the cherry tomatoes. Dice the avocado and set aside.

      Make Dressing: In a small bowl, whisk together the olive oil, apple cider vinegar, honey, salt, and pepper until well combined.

        Combine Ingredients: In a large bowl, toss the roasted beets, cucumber, cherry tomatoes, red onion, avocado, and fresh parsley together gently to avoid mashing the avocado.

          Dress the Salad: Drizzle the dressing over the salad mixture and toss gently to coat all the ingredients evenly. If using, sprinkle feta cheese on top for added flavor.

            Serve: Transfer the salad to a serving platter or bowl. Enjoy immediately, or chill in the fridge for 15-30 minutes to let the flavors meld together.
