2 cups red cabbage, shredded

1/4 cup chopped peanuts (for garnish)

For the Peanut Dressing:

1/4 cup creamy peanut butter

2 tablespoons soy sauce

2 tablespoons rice vinegar

1 tablespoon lime juice

1 tablespoon honey or maple syrup (for vegan option)

1 teaspoon sesame oil

1 clove garlic, minced

1 teaspoon freshly grated ginger

2-3 tablespoons warm water (as needed to thin the dressing)

Prepare the Vegetables: In a large bowl, combine the green cabbage, red cabbage, grated carrots, red bell pepper, snap peas, green onions, and cilantro. Toss them together until well combined.
