2 medium-sized beets, scrubbed and peeled

2 tablespoons olive oil

1 teaspoon sea salt

1 teaspoon garlic powder

1 teaspoon smoked paprika

1/2 teaspoon black pepper

Preheat the Oven: Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper for easy cleanup.

    Slice the Beets: Using a mandoline or sharp knife, thinly slice the beets into even rounds. Aim for about 1/8 inch thick to ensure they become crispy during roasting.

      Season the Beets: In a large bowl, combine the sliced beets with the olive oil, sea salt, garlic powder, smoked paprika, and black pepper. Toss until the beet slices are well-coated in the seasoning mixture.

        Arrange on Baking Sheet: Spread the seasoned beet slices in a single layer on the prepared baking sheet. Avoid overcrowding to ensure even cooking.
