Crunchy Ranch Air-Fried Cauliflower

1 medium head of cauliflower, cut into bite-sized florets

1 cup of buttermilk (or dairy-free alternative)

1 tablespoon apple cider vinegar

1 cup all-purpose flour (or gluten-free flour)

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon smoked paprika

1 teaspoon dried dill

1 teaspoon dried parsley

1/2 teaspoon salt

1/2 teaspoon black pepper

1/2 teaspoon cayenne pepper (optional, for spice)

1 cup breadcrumbs (panko for extra crunch)

Cooking spray (olive oil or avocado oil)

Marinate the Cauliflower: In a large bowl, whisk together the buttermilk and apple cider vinegar. Add the cauliflower florets to the mixture, ensuring they are well-coated. Cover the bowl and let it marinate in the refrigerator for at least 30 minutes, or up to 2 hours for deeper flavor.

    Prep the Coating: In a separate bowl, combine the flour, garlic powder, onion powder, smoked paprika, dried dill, dried parsley, salt, black pepper, and cayenne pepper (if using). Stir well to mix all of the dry ingredients evenly.

      Breading Station: Place the breadcrumbs in a shallow dish. After marinating, remove the cauliflower from the buttermilk, allowing excess liquid to drip off. Dredge each piece in the seasoned flour mixture, then dip it back into the buttermilk briefly, followed by coating it in the breadcrumbs. Ensure each piece is evenly coated for maximum crunch.

        Preheat the Air Fryer: Preheat your air fryer to 400°F (200°C) for about 5 minutes.

          Arrange in Air Fryer Basket: Lightly spray the air fryer basket with cooking spray. Place the coated cauliflower florets in a single layer in the basket. Avoid overcrowding to ensure even cooking. You may need to work in batches.

            Air Fry the Cauliflower: Spray the tops of the florets lightly with cooking spray to promote crispiness. Air fry for 12-15 minutes, shaking the basket halfway through to ensure even browning. The cauliflower should be golden and crispy when done.

              Serve and Enjoy: Once cooked, carefully remove the cauliflower bites and let them cool for a minute. Serve them hot with your favorite dipping sauce (like ranch or blue cheese) for an added flavor burst!
