1 pound hot dogs, diced

2 cans (15 oz each) chili (with or without beans, your choice)

1 cup shredded cheddar cheese

1 cup shredded Monterey Jack cheese

1 can (8 oz) biscuit dough, cut into quarters

1/2 cup diced onion (optional)

1/2 cup diced bell pepper (optional)

1 tablespoon garlic powder

1 tablespoon chili powder

1 teaspoon cumin

Salt and pepper to taste

Chopped green onions for garnish

Prepare the Base: Begin by dicing the hot dogs into bite-sized pieces. If you’re using them, also finely chop the onion and bell pepper.

    Combine Ingredients: In your crockpot, combine the diced hot dogs, both cans of chili, garlic powder, chili powder, cumin, salt, and pepper. Mix well to distribute everything evenly.

      Layer it Up: If you're using onion and bell pepper, sprinkle them on top of the hot dog and chili mixture.

        Add Biscuit Dough: Scatter the quartered biscuit pieces evenly across the top of the mixture. This will create a nice, fluffy layer once cooked.

          Cheesy Goodness: Sprinkle half of the shredded cheddar and Monterey Jack cheese over the biscuit dough, reserving the other half for later.

            Cook: Cover the crockpot with the lid and cook on low for 4-6 hours or on high for 2-3 hours. The biscuit dough should be fluffy and cooked through.

              Final Touch: About 30 minutes before serving, add the remaining cheese on top. Cover and allow it to melt.
