2 medium zucchinis (about 1 pound), grated

1 teaspoon salt

1/2 cup all-purpose flour (or gluten-free flour for a gluten-free option)

1/2 cup shredded feta cheese

1 large egg, beaten

1/4 cup finely chopped green onions (or shallots)

1/4 cup grated Parmesan cheese

1/2 teaspoon garlic powder

1/4 teaspoon black pepper

1/4 teaspoon paprika (optional, for a hint of spice)

1/4 cup fresh herbs (like dill, parsley, or cilantro), chopped

Olive oil, for frying

Prep the Zucchini: Place the grated zucchini in a colander and sprinkle with salt. Let it sit for about 10-15 minutes. This will help draw out excess moisture. After 15 minutes, use your hands or a clean kitchen towel to squeeze out any remaining liquid from the zucchini. The drier the zucchini, the crispier your fritters will be!

    Mix Ingredients: In a large mixing bowl, combine the grated zucchini, flour, feta cheese, beaten egg, green onions, Parmesan cheese, garlic powder, black pepper, and paprika (if using). Stir well until all ingredients are combined into a thick batter.
