Ingredients

1 pound boneless, skinless chicken breasts (cut into strips)

1 cup all-purpose flour

2 large eggs

1 tablespoon milk

1 cup Panko breadcrumbs

1/2 cup grated Parmesan cheese

1 teaspoon garlic powder

1 teaspoon paprika

1 teaspoon Italian seasoning

Salt and pepper to taste

1/2 cup mayonnaise (for dipping)

2 tablespoons lemon juice (for dipping)

Fresh parsley (for garnish)

Instructions

Prepare the Chicken: Preheat your oven to 400°F (200°C). Rinse the chicken strips under cold water and pat them dry with paper towels. Season both sides with salt and pepper.

Set Up Your Bread Station: In three separate shallow bowls, place the flour in the first, whisk together the eggs and milk in the second, and combine the Panko breadcrumbs, grated Parmesan cheese, garlic powder, paprika, Italian seasoning, salt, and pepper in the third bowl.

      Coat the Chicken:

        - Start by dipping each chicken strip into the flour, ensuring it is fully coated. Shake off any excess flour.

          - Next, dip the floured chicken strip into the egg mixture, allowing any excess to drip off.

            - Finally, coat the chicken strip in the Panko-Parmesan mixture, pressing down lightly to ensure it sticks. Place each coated strip on a baking sheet lined with parchment paper.

Bake the Chicken: Once all strips are coated, lightly spray them with cooking spray to help them crisp up in the oven. Bake for 15-20 minutes or until golden brown and the chicken is cooked through (internal temperature should reach 165°F / 74°C). Flip the strips halfway through cooking for even crispiness.

Prepare the Dipping Sauce: In a small bowl, mix the mayonnaise with the lemon juice. Add salt and pepper to taste and stir until well combined.

Serve: Once baked, remove the chicken strips from the oven and allow them to cool for a few minutes. Garnish with freshly chopped parsley. Serve hot with the lemon mayonnaise dip on the side.
