Ingredients

2 lbs chicken wings

1 tsp baking powder

1 tsp salt

½ tsp black pepper

½ tsp smoked paprika

½ cup unsalted butter (melted)

4 cloves garlic (minced)

1 cup grated Parmesan cheese

2 tbsp fresh parsley (finely chopped)

Zest of 1 lemon

Optional: Red pepper flakes for heat

Instructions

Preheat the Oven: Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper or a silicone baking mat for easy cleanup.

Prep the Wings: In a large bowl, rinse and pat dry the chicken wings thoroughly with paper towels. Removing excess moisture will help achieve maximum crispiness.

Season: In a separate bowl, combine the baking powder, salt, black pepper, and smoked paprika. Sprinkle the mixture over the wings and toss well to coat evenly. This seasoning not only adds flavor but will also enhance the crispiness during baking.

Arrange Wings: Place the seasoned wings on the prepared baking sheet in a single layer, ensuring they are not touching each other to allow hot air to circulate around them for even cooking.

Bake: Bake the wings in the preheated oven for about 40-45 minutes, flipping them halfway through, until they are golden brown and crispy.

Make Garlic Parmesan Sauce: While the wings are baking, prepare the garlic sauce. In a skillet over medium heat, melt the butter and add minced garlic. Sauté for about 1-2 minutes until fragrant but not browned. Remove the skillet from heat.

Mix in Cheese and Herbs: Stir in the grated Parmesan cheese, chopped parsley, and lemon zest. If desired, add red pepper flakes to taste for an extra kick.

Coat the Wings: Once the wings are done baking, remove them from the oven and transfer them to a large mixing bowl. Pour the garlic Parmesan sauce over the wings and toss gently to coat them evenly.

Final Bake (optional): If you like your wings extra crispy, return them to the oven for an additional 5-10 minutes after tossing them with the sauce.

Serve: Transfer the coated wings to a platter. Garnish with more parsley and lemon zest, if desired, and serve immediately with your favorite dipping sauces!
