These compact green vegetables belong to the Brassica family, which also includes cabbage, kale, and broccoli. While they may have garnered a reputation as a disliked vegetable among children, their unique flavor and versatility have led to a resurgence in popularity, particularly among food enthusiasts and health-conscious eaters.

Ingredients

1 lb Brussels sprouts, halved

3 tablespoons olive oil

4 cloves garlic, minced

1 teaspoon salt

1/2 teaspoon black pepper

1/2 teaspoon red pepper flakes (optional)

1/3 cup grated Parmesan cheese

2 tablespoons balsamic vinegar

Fresh parsley, chopped (for garnish)

Instructions

Preheat Oven: Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper for easy cleanup.

Prepare Brussels Sprouts: Rinse and trim the Brussels sprouts, removing any yellow or damaged leaves. Cut them in half lengthwise.

Season Sprouts: In a large bowl, combine the halved Brussels sprouts, olive oil, minced garlic, salt, black pepper, and red pepper flakes (if using). Toss everything together until the sprouts are evenly coated.

Arrange on Baking Sheet: Spread the seasoned Brussels sprouts evenly on the prepared baking sheet, cut side down for maximum crispiness. Ensure they are not overcrowded to allow for even roasting.

Roast: Roast in the preheated oven for 20-25 minutes, or until the sprouts are golden brown and crispy on the edges. Toss halfway through cooking for even browning.

Add Cheese: After removing from the oven, immediately sprinkle the hot Brussels sprouts with grated Parmesan cheese. Toss gently to combine.

Drizzle with Balsamic: Just before serving, drizzle the balsamic vinegar over the Brussels sprouts for an added layer of flavor.

Garnish: Transfer the crispy Brussels sprouts to a serving platter and garnish with freshly chopped parsley for a pop of color.
