8 small corn tortillas

1 cup fresh strawberries, hulled and diced

1 cup mango, diced

1 cup kiwi, peeled and diced

1 cup blueberries

1/4 cup coconut flakes, toasted

1/4 cup honey or agave syrup

1/2 teaspoon cinnamon

1 tablespoon lime juice

Optional toppings: whipped cream or yogurt, mint leaves, lime wedges

Instructions

Prepare the Tortillas: Heat a large skillet over medium heat. Lightly fry the corn tortillas for about 30 seconds on each side until they are golden and slightly crispy. Alternatively, you can bake them in the oven at 375°F (190°C) until crispy. Set aside to cool.

Prepare the Fruit Filling: In a mixing bowl, combine the strawberries, mango, kiwi, and blueberries. Drizzle with honey (or agave syrup), lime juice, and sprinkle with cinnamon. Gently toss until the fruits are evenly coated.

Assemble the Tacos: Take one tortilla and fill it with a generous amount of the fruit mixture. Sprinkle with toasted coconut flakes for added crunch. Repeat with remaining tortillas and filling.

Serve: Arrange the tacos on a platter. Optionally, serve with whipped cream or yogurt on the side, and garnish with mint leaves and lime wedges for an extra zing.

Enjoy: Serve immediately for the best texture and flavor, and enjoy this vibrant and refreshing treat!
