Ingredients

1 lb fresh figs, stems removed and quartered

1 cup granulated sugar

1 tablespoon fresh lemon juice

1 teaspoon vanilla extract

1/4 teaspoon cinnamon

Pinch of salt

1/2 cup chopped walnuts or pecans (for a crunchy texture)

Zest of 1 lemon

Optional: 1 tablespoon balsamic vinegar (for a depth of flavor)

Instructions

Prepare the Figs: Start by washing the figs under cold water to remove any dirt. Remove the stems and cut each fig into quarters. This will help them break down more easily during cooking.

Cook the Figs: In a medium-sized saucepan, add the quartered figs, sugar, lemon juice, vanilla extract, cinnamon, and salt. If you are using balsamic vinegar, add that as well. Cook over medium heat, stirring frequently until the sugar has dissolved and the mixture starts to bubble.

Simmer: Reduce the heat to low and let the mixture simmer for about 30-35 minutes. Stir occasionally to prevent sticking. You want the figs to soften and break down. If the mixture becomes too thick or starts to stick, add a tablespoon of water.

Add Nuts: Once the figs have cooked down and reached a jam-like consistency, stir in the chopped walnuts or pecans and lemon zest. Allow it to cook for an additional 5 minutes. The nuts will add a delightful crunch to your jam.

Check Consistency: To test if your fig jam is ready, place a small spoonful on a plate and let it cool for a minute. Run your finger through it; if it holds its shape, it’s done! If not, continue cooking for a few more minutes.

Cool and Store: Once done, remove the saucepan from heat and let the fig jam cool to room temperature. Transfer it to a sterilized jar and seal it tightly. Store in the refrigerator for up to 2 weeks.

Serve: Enjoy your crispy fig jam spread on toast, paired with cheese, or as a decadent filling for pastries and desserts!
