2 boneless, skinless chicken breasts, thinly sliced

1 tablespoon olive oil

1 teaspoon chili powder

1 teaspoon cumin

1 teaspoon paprika

1 teaspoon garlic powder

1 teaspoon onion powder

Salt and pepper to taste

1 red bell pepper, sliced

1 green bell pepper, sliced

1 small onion, sliced

4 large flour tortillas

2 cups shredded Monterey Jack cheese (or a blend of cheeses)

1 avocado, sliced (for serving)

Sour cream (for serving)

Fresh cilantro, chopped (for garnish)

Lime wedges (for serving)

Instructions
 

Marinate the Chicken:

    - In a medium bowl, combine the sliced chicken breasts with olive oil, chili powder, cumin, paprika, garlic powder, onion powder, salt, and pepper. Mix until all chicken pieces are well coated. Allow it to marinate for at least 15-20 minutes.

      Sauté the Vegetables:

        - Heat a large skillet over medium-high heat. Add the marinated chicken to the skillet and cook for about 5-7 minutes, or until the chicken is fully cooked and has a nice golden-brown color. Remove the chicken from the skillet and set aside.

          - In the same skillet, add the sliced bell peppers and onion. Sauté for about 5 minutes until they are tender and slightly caramelized. Return the cooked chicken to the skillet and toss everything together.

            Assemble the Quesadillas:

              - Heat a separate large skillet or griddle over medium heat. Place one tortilla in the skillet and sprinkle half of it with about 1/2 cup of cheese, followed by half of the chicken and vegetable mixture. Top with another 1/2 cup of cheese and fold the tortilla in half.

                - Cook for 3-4 minutes on each side, or until the tortillas are golden brown and the cheese is melted. Repeat with the second tortilla.

                  Serve:

                    - Once cooked, remove the quesadilla from the skillet and let it rest for a minute before cutting it into wedges. Serve with avocado slices, sour cream, and garnish with fresh cilantro. Squeeze lime juice over the quesadillas for an extra burst of flavor!
