3 cups fresh cherries, pitted and halved

1 cup water

3/4 cup granulated sugar

1 tablespoon lemon juice

1 tablespoon cornstarch

Pinch of salt

1/4 teaspoon almond extract (optional)

1/2 cup crushed ice (for crispy texture)

Prepare the Cherries: In a medium saucepan, combine the pitted and halved cherries, water, and sugar. Cook over medium heat, stirring until the sugar dissolves and the cherries become soft, about 5-7 minutes. Remove from heat and let it cool slightly.

    Blend the Mixture: Once the cherry mixture has cooled, transfer it to a blender or food processor. Add lemon juice, cornstarch, salt, and almond extract (if using). Blend until smooth.

      Strain the Mixture: For a smoother texture, strain the blended mixture through a fine mesh sieve into a bowl, discarding the solids.
