For the Falafel:

1 cup dried chickpeas (soaked overnight)

1 small onion, roughly chopped

2 cloves garlic, minced

1/4 cup fresh parsley, chopped

1/4 cup fresh cilantro, chopped

1 tsp ground cumin

1 tsp ground coriander

1/2 tsp baking soda

1/2 tsp salt

1/4 tsp black pepper

2 tbsp olive oil (plus more for brushing)

For the Wraps:

4 whole wheat or regular wraps

1 cup shredded lettuce

1 medium tomato, diced

1 cucumber, sliced

1/2 red onion, thinly sliced

For the Tahini Sauce:

1/4 cup tahini

2 tbsp lemon juice

1 clove garlic, minced

Water (to thin)

Salt to taste

Preheat Oven: Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.

    Prepare the Falafel Mixture: Drain the soaked chickpeas and place them in a food processor. Add the chopped onion, garlic, parsley, cilantro, cumin, coriander, baking soda, salt, and pepper. Pulse until the mixture is well combined but not puréed; it should have a slightly coarse texture.

      Form the Falafel Balls: Use your hands to form small balls or patties from the mixture (about 1.5 inches in diameter). Place them on the prepared baking sheet.

        Brush and Bake: Lightly brush the falafel balls with olive oil to promote crispiness. Bake in the preheated oven for 25-30 minutes, flipping halfway through until they are golden brown and crispy.

          Make the Tahini Sauce: In a small bowl, whisk together the tahini, lemon juice, minced garlic, and a pinch of salt. Gradually add water until you reach your desired consistency — it should be pourable but still thick.

            Assemble the Wraps: Once the falafel are done baking, it's time to assemble your wraps. On each wrap, layer a generous amount of shredded lettuce, diced tomatoes, sliced cucumbers, and red onion. Add 3-4 crispy falafel balls on top and drizzle with the tahini sauce.

              Wrap It Up: Fold the sides of the wrap and roll it tightly to secure all the fillings. You can toast the wrapped falafel in a pan for 1-2 minutes on each side for added warmth and crunch.

                Serve: Cut the wraps in half and serve with extra tahini sauce on the side.
