Ingredients

1 large head of cauliflower, cut into bite-sized florets

1 cup all-purpose flour (or gluten-free flour for a gluten-free option)

1 cup buttermilk (or plant-based milk mixed with 1 tbsp vinegar for dairy-free)

1 cup breadcrumbs (preferably panko for extra crunch)

1 tsp garlic powder

1 tsp onion powder

1 tsp smoked paprika

½ tsp cayenne pepper (adjust to taste)

Salt and pepper to taste

Cooking spray or olive oil for drizzling

Optional: Fresh parsley, chopped, for garnish

Instructions

Preheat Oven: Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.

Prepare Cauliflower: In a large bowl, toss the cauliflower florets with a pinch of salt and pepper. Set aside.

Make the Batter: In another bowl, combine the flour, garlic powder, onion powder, smoked paprika, cayenne pepper, and a pinch of salt. Gradually whisk in the buttermilk until the mixture is smooth.

Bread the Cauliflower: Dip each cauliflower floret into the batter, ensuring it’s well coated, then roll it in the breadcrumbs to fully cover. Place the breaded florets on the prepared baking sheet.

Bake: Lightly spray the coated cauliflower with cooking spray or drizzle with olive oil to enhance crispiness. Bake in the preheated oven for 25-30 minutes, flipping halfway through, until golden brown and crispy.

Serve: Remove from the oven and let cool slightly. If desired, sprinkle with fresh parsley before serving. These poppers can be enjoyed plain or paired with your favorite dipping sauce, like ranch or buffalo sauce.
