Creamy Zucchini Corn Chowder

2 medium zucchinis, diced

1 cup sweet corn kernels (fresh or frozen)

1 medium onion, finely chopped

3 cloves garlic, minced

2 medium potatoes, peeled and diced

4 cups vegetable broth

1 cup heavy cream (or coconut milk for a dairy-free version)

2 tablespoons olive oil

1 teaspoon dried thyme

1/2 teaspoon smoked paprika

Salt and pepper to taste

Fresh basil or parsley for garnish (optional)

Instructions
 

Sauté the Aromatics: In a large pot, heat the olive oil over medium heat. Add the chopped onion and garlic, cooking until the onion is translucent, about 5 minutes.

    Add the Zucchini and Potatoes: Stir in the diced zucchini and potatoes, cooking for an additional 5 minutes until the zucchini begins to soften.

      Incorporate the Corn: Add the sweet corn kernels to the pot, followed by the vegetable broth, thyme, smoked paprika, salt, and pepper. Bring to a boil.

        Simmer: Reduce the heat and let the chowder simmer for about 15-20 minutes, or until the potatoes are tender.

          Blend the Chowder: Using an immersion blender, blend about half of the mixture until smooth while leaving some chunks for texture. Alternatively, you can transfer half the chowder to a blender and blend it before returning it to the pot.

            Add Creaminess: Stir in the heavy cream (or coconut milk) and heat through. Adjust seasoning to taste.
